Frittata “Formula”

 

For us, Frittata is a ‘clean out the frig’ easy weeknight meal.  Most of the ingredients we always have in the frig, but the veggies and scraps of meat change every time.

 

I use an oven-safe 12” skillet for both on the stove-top and then to finish in the oven.

 

preheat oven to 330

 

For every six eggs, use 1/4 cup heavy cream, 1 cup cheese, and 2 cups total of vegetables and/or meat.

 

On the stovetop:

·       cook bacon if needed, then remove

 

·       saute the veggies, 

 

·       add back in bacon or whatever chopped meat you have handy (chicken, ham, beef, etc)

 

·       sprinkle the cheese

 

·       pour over with cream/egg mixture,

 

·       cook for a minute or two, till the eggs at the edges of the pan begin to set

 

Bake at 350 for 8-10 mins, till eggs don't run.

 

Note: don’t forget that pan handle is HOT!  Once you pull the pan out of the oven, cover the handle with a towel or mitt to remind yourself not to touch.  Ask me how I know!
