Taco Casserole

 

Since its just the 2 of us, I’ll make up 2 smaller casserole dishes and freeze one before it goes in the oven.  A few weeks later I’ll thaw and bake for a fresh dinner.  Or the 2nd casserole will go to a family in need of a dinner!  I’ve been buying extra casserole dishes when I go thrifting so the recipient doesn’t need to return the dish.

 

Servings: 8

 

Ingredients:

1 1/2  lb  ground BEEF or TURKEY

1  pkg (1.25 ounces) McCormick® Taco Seasoning

1 can diced tomatoes

1 can (16 ounces) PINTO beans, drained and rinsed (optional)

1 can (11 oz) Mexican corn mixture or whole kernel corn, drained

1 c shredded Cheddar CHEESE

1 coarsely crushed tortilla CHIPS

 

Directions:

 

1. Preheat oven to 400°F. Brown meat in a large skillet over medium-high heat; drain.

 

2. Stir in taco seasoning, beans, tomato sauce, and corn. Simmer 5 minutes.

 

3. Spoon mixture into a 2-quart baking dish. Top with cheese and tortilla chips. Bake until cheese is melted, about 5 to 10 minutes. Garnish casserole with sour cream and sliced green onions, and serve with shredded lettuce and chopped tomatoes, if desired
